Pan Seared Cod with Butter Herb Sauce

The perfect recipe to use up your garden vegetables with this simple dinner menu Pan seared Cod fish in a tomato - butter herb sauce with a side of simply sauteed garden vegetables. A simple recipe that will impress your guests.

INGREDIENTS:

Pan Seared Cod:

2.5 Lb. Cod Loins

1 Handful Fresh Chopped Yellow & Red Tomatoes

1/2
Cup Clarified Butter or Ghee

1
Shallot Chopped

1/2
Cup White Wine

1/4
TBSP Fresh Basil, Dill, and Parsley Chopped

1
Tsp Seafood Seasoning or Salt & Pepper or to Taste

 

Sauteed Veggies:

1 TBSP Ghee or Clarified Butter or Other Oil

2 Large Carrots

2 Purple Sweet Potatoes

2 Cloves Garlic

3 Parsnips

2 Radishes

1 Tsp Fresh Chopped Thyme

1/4 Cup Chicken Stock

    DIRECTIONS:

    Pan Seared Cod:

    1. Sear the cod in 2 T clarified butter for a few minutes on each side. Remove for the pan.
    2. Add the shallots first for a minute, then the tomatoes.
    3. Add wine and adjust seasoning, let it reduce on medium/high heat.
    4. After a few minutes, add the cod back into the pan and lower the heat.
    5. Finish with fresh chopped herbs and last tablespoon of butter.

     

    Sauteed Veggies:

    1. Saute veggies in ghee over medium/high heat.
    2. Add thyme, salt and pepper to taste with chicken stock before serving.
