Sear the cod in 2 T clarified butter for a few minutes on each side. Remove for the pan - then add the shallots first for a minute, then the tomatoes.
Add wine and adjust seasoning, let it reduce on medium/high heat. After a few minutes, add the cod back into the pan and lower the heat.
Finish with fresh chopped herbs and last tablespoon of butter.
Saute veggies in ghee over medium/high heat. Add thyme, salt and pepper to taste with chicken stock before serving.
