Egg whites from the sauce
Four more eggs

A Handful of Roma Tomatoes
A Handful of Fresh Spinach
Cheese to taste

So as not to waste ingredients, use the egg whites from the hollandaise sauce as well as four more full eggs. Add milk, pepper, and salt, then cook on medium heat in a greased saucepan. As the edges solidify, shift pan so more egg gets to the edge and gets cooked. Add sliced tomatoes, spinach and cheese, fold it over carefully, wait for the cheese to melt - and Enjoy!
