Breakfast Casserole Recipe

Cut up two green onions. Spray your muffin pan(s) with non-stick spray. Add sliced hashbrowns to each cup, making sure to cover the bottom of each. Add salt and pepper to taste! Cut 5-6 cooked sausage links and add some to each cup. Other meats would work too as long as they are cooked! Cook one cup of spinach, and add some to each cup. Add 1 Tbsp. of green onions to each cup. Now, crack an egg into each cup, and sprinkle with a cheese of your choice! 

Bake at 375° for 20 minutes or until your eggs are set. 

ENJOY!


Pro-Tip: Make as many casserole bites as you want, and freeze the rest! Heat them up each morning, or have one for a snack. They are perfect for breakfast on the go!
